I purchased this cheese during a 'free shipping' promotion along with some exotic sausages by the same vendor * also EXCELLENT * and oh, am I glad I took the chance!
THIS is the best goat cheese that I have ever had, hands down, and I believe that even non-goat cheese afficionados will appreciate the quality here. Yes, it has a slightly intimidating look to it, but from the very first taste you are drawn into the layers of flavor and texture. I won't attempt to describe it any further - the product description does as well as I'm likely to - but I will say that it was my lucky day when I found it and I will definitely be ordering more next "splurge".

What is that cheese you got us for Christmas? I'm having it for the first time right now. It's awesome. I'm having the caviar now too. Very salty... but very good. The cheese made me nervous when it arrived. It was a green moldy hockey puck that smelled like an old gym sock. We love it.

After an affinage of four weeks, the surface of this cheese is very knobby with a dry rind covered with a blue-grey mold, under which is a layer of powdered charcoal. Its texture is slightly hard at first, then moist, heavy, and claylike as it blends and melts in the mouth. The taste is slightly sour and salty with some sweetness. Pairs well with a "Sancerre - Pouilly Fume" white wine.
